KUnit: Docs: style: fix some Kconfig example issues

Fix the Kconfig example to be closer to Kconfig coding style. Also add punctuation and a trailing slash ('/') to a sub-directory name -- this is how the text mostly appears in other Kconfig files. As discussed in [1], KUnit tests have hitherto not had a particularly consistent naming scheme. This adds documentation outlining how tests and test suites should be named, including how those names should be used in Kconfig entries and filenames.
